GUEST POST - Top Wedding Caterer Jackson Gilmour Unveils Their Luxury Plant-Based Menus

Chef Joyce O'Hagan of Jackson Gilmour, luxury wedding caterersTop wedding caterer Jackson Gilmour has recently unveiled their luxury plant-based menus. Their new range of menus promising natural ingredients and indulgent flavours designed for the increasing number of guests with dietary requirements who can feel short-changed at weddings. 

Chef, Joyce O’Hagan explains:

“I passionately believe that everyone - whether vegetarian, gluten-free, dairy-free or vegan – should feel like they are being served food which is at least as delicious as the other guests. Our new dishes can be offered as an alternative but with an increasing number ‘plant-curious’ consumers, we anticipate some couples may choose to serve this delicious menu to all their guests.”

Inspiration for the new menu came after a film director approached Joyce to cook a vegan summer lunch for his team ahead of the Cannes Film Festival. Joyce explains further:

“He wasn’t vegan himself but many of his guests were and he was keen to try something new. I jumped at the chance to develop a show stopping plant-based menu and by experimenting with seasoning and techniques I believe we have created range of vegan starters, mains and desserts which compete uncompromisingly with dishes that feature animal produce.”

The Jackson Gilmour development team undertook extensive research; talking to wedding guests, investigating new products and ingredients and meeting with specialist suppliers. The resulting menu combines tasty ingredients to deliver beautiful flavours and satisfying textures with theatrical presentation. Joyce continues:

“We recognise that younger people in particular are concerned about sustainability and the environmental impact of mass food production as well as animal welfare. We are interested to see which of our clients will be ‘plant-curious’ enough to try out our new range.”
